1 Yellow Squash
Small – Medium Bunch of Asparagus
¼ Cup Fat-Free Milk
1 Cup Breadcrumbs
1½ teaspoon Italian Seasoning
¼ Cup Grated Parmesan
Salt – to taste
Pepper – to taste
Olive Oil non-stick spray
1.) Preheat oven to 425
2.) Prepare baking sheet with foil and non-stick cooking spray
3.) Clean all the veggies and cut zucchini & squash into thin strips, cut the bottom off the asparagus.
4.) In a loaf pan beat the egg until frothy and then whisk in the milk until frothy.
5.) In another loaf pan combine the breadcrumbs, seasoning, cheese, salt & pepper.
6.) Dredge each zucchini in the egg mixture and then into the breadcrumbs, lay onto a baking sheet.
7.) Repeat with the squash and zucchini.
8.) Bake for 20-30 minutes until golden brown and crispy.
9.) Sprinkle with a bit more salt when you remove them from the oven.
10.) Serve with marinara sauce
